Coming to the Half Way Point, New Recipes & Camping
Thursday, April 29, 2021
This Saturday is the Spring 5% Challenge half way point. I am trying harder and hope to see the scale go down a bit. Hubby is tracking calcium too and discovered we both should have more calcium, so he bought calcium supplements. It's nice to have him pursing the same goals.
Each day I am trying a new recipe or inventing one. Hubby is enjoying the food and has been a big help with dishwashing, buying freggies, and taking out the compost.
I have a new recipe for a very tasty Breakfast Carrot Cake Smoothie.
Here's one for asparagus with a sauce, and there is sauce left over for another batch
• 1 pound fresh asparagus, trimmed and boiled
• 2 tablespoons butter
• 1 tablespoon soy sauce
• 1 teaspoon balsamic vinegar
I tried a Spark recipe Applesauce Oatmeal Muffins, only 93 calories and very tasty. I added a few shakes of nutmeg and allspice, walnuts and a few raisins.
Crockpot Brown Sugar and Balsamic Glazed Pork Loin which is extremely good!
The next week's challenge we are to include a freggie with breakfast, so it should be an easy one.
In the morning we are leaving for 4 nights of camping. We are fortunate that with the COVID restrictions we can still camp in our area. The campsite is about 80 minutes away and we won't socialize, so it will be ok. I am looking forward to a Friday walk in the rain along the lakeshore with Rebel and listening to audiobooks. The other days it should be sunny and it will be nice to eat outdoors and play cards on the picnic table.
