I visit lots of different cooking blogs but I just discovered a new one (new to me) that I really like: Paleo Running Momma (paleorunningmomma.com). I am going to make her Chinese Chicken Salad tonight.

”Almost” – Baked Potato Casserole

Course: Side Dish
Cuisine: American
Author: Sassy in Texas

Ingredients
3 10 oz bags Riced Cauliflower -Each Bag Steamed in Microwave
1/2 pkg Maple Bacon or Turkey Bacon -Chopped
6 Green Onions plus Tops -Chopped
1 24 oz Light or Fat Free Sour Cream -You'll Use A Little More Than Half
1/3 cup Mozzarella Cheese -Shredded
1/2 cup Colby-Jack/Low Fat Cheese -Shredded
Salt & Pepper -Plenty on Hand
Celery Salt -Plenty on Hand

Instructions
You need 1 pkg. of maple bacon sliced in half and then chopped up. Turkey Bacon works Great! Place the other half in wax paper, fold up, slide into a plastic zip bag and let the air outta that thang!

Freeze or place back in the fridge. Place the heat under skillet to medium high & add the bacon. While that is going, start/steam {1 pkg at a time} the riced cauliflower in the microwave.
This will take 12 minutes. I use this time ta chop the green onions & stir the bacon until crisp.

Place the Crisp bacon on paper towels to drain. Carefully, open each bag of cauliflower and pour into a large mixin' bowl.
Preheat Oven to 375* – Spray a 2.5 qt CorningWare Baking Dish generously w/canola oil.
Sprinkle a nice amount of salt & pepper over the cauliflower.

Next, sprinkle in 1/2 tsp of celery salt & mix up well.
Now, add the bacon & green onions. Gently fold in.Scoop in a little MORE than half of the container of sour cream.

**Remember, you can use light or fat free, and there is NO Butter in this recipe. Not ta mention – No Potatoes. lol …MIX WELL…**

Lightly sprinkle in S & P to taste and 1/4 tsp of celery salt over everything-then dump in the 1/3 c of shredded mozzarella & 1/2 c of colby-jack cheese. Mix & Combine Well and then pour into the prepared baking dish.
Spread Evenly. BAKE for 25 -30 minutes. All ovens vary.
You want it hot and bubbly. Enjoy your "Almost" – Loaded Baked Potato Y'all!
