I do the chicken or boiled egg thing, too. :) That, and cheese sticks are staples in my kitchen.

When I cook on our grill, I always throw on an extra 6-8 boneless, skinless chicken breasts. Sometimes I will season them but most of the time I cook them plain so that I can use them in whatever way I choose. I love to cut them up into thin slices (after cooking) and put them on a salad. Another thing I do is to use them in fajitas - although you probably wouldn't make anything that elaborate for lunch. Sometimes I will cut them in half (through the width) making two thinner pieces that I put on a grilled sandwich-using the sandwich thins. You can also use the thin strips in a whole wheat tortilla wrap with 1/4 an avocado, some spinach, onion, and tomato. Really yummy and
quick!
The main thing for me is that they are grilled which adds it's own flavor to whatever you
use the chicken in.
And because you grilled them ahead, they're a fast, easy, and low calorie add in for protein.

I am curious to see what others put also. Yesterday we used leftover chicken and made a quick quesadillas. Today I just had a turkey roll-up. I used Flatout 100% whole wheat for a tortilla, deli turkey, one piece of cheese and lettuce. You can add what veggies you like too.

I'm at home at lunchtime 5-6 days a week. I'm at a total loss as to what to eat as a protein for lunch. I want something fast and easy but with low calories. Any suggestions?
