Another quick & easy favorite is grilled gardenburgers on Orowheat Whole Wheat Sandwich Thins. We recently found these sandwich thins @ Costco; they are 100 calories and have several grams of fiber. We love to top our burgers with jalapenos, pickles, tomato & shredded lettuce or sprouts. Also good with a side of Bush's Vegetarian Baked Beans, or cabbage slaw w/Thousand Island dressing. I'm getting hungry!

I've been hunting all over the kitchen and in my spark recipes (I thought it was from Spark) but anyway, it's four chicken breasts in the crock pot with a half cup (or more) of brown rice and your favorite salsa! It's yummy and easy! emoticon

wow the stir fry sounds awesome, that one i need to try and the chicken, potatoe soup with the southwester flair. i just need to change the veggies in my soup and add the beans. you guys are good.

Wow such great ideas coming along! I forget how filling a nice salad can be with all the healthy fixins! I love grilled chicken strips over chopped romaine with parmesan and a bit of caesar salad dressing.

...and my crockpots (I have 3) are my best friends! I also made a chicken potato soup last night, in fact it tasted even better for dinner tonite! I added corn and blackbean and cumin for a Southwestern flavor! I'll have to share a couple crockpot recipes later this week.

I love stir fried veggies!

I use olive oil in my wok, add 1/4 of a cabbage green or purple), a large onion, julienned carrots, cashews, celery, sunflower seeds, sesame seeds, pumpkin seeds, bean sprouts, red bell peppers, left over chicken if available. I have found a reduced sodium soy sauce-- 1 tsp of that.
It steams and fries up wonderfully! Make enough for lunch the next day!

The last time I made it I used chicken tenders (not breaded tenders) and added fresh cilantro and frozen corn in the last hour of cooking. I served as sides shredded cheese, green onions and sour cream for those who wanted or can have it. And instead of bread used small corn tortillas.
The recipe doesn't say whether or not to drain the beans and I have made them both ways and not drained makes for a more moist entree. If you drain them, I would add some broth.
What could be more easy than throwing everything into a pot and dishing it out when done?

Oh that sounds good!

I also cook extra meat ahead of time, and store it in the fridge for add in's. Makes things a lot easier when time is short!

Tonight we had salad (romaine lettuce, fat free shredded cheddar cheese, tomatoes, black olives, bacon bits, French's fried onions) then topped it with Kemp's imitation crab chunks and fat free ranch dressing!

i used left over chicken tonight and made a potato soup. it was loaded with veggies and such. wonderful and low fat.

Great ideas - pasta salads are always filling comfort meals.

If you bake chicken breasts or tenders in the oven in advance, and then keep them on hand in the fridge it is so easy to create a wide variety of meals using simple ingredients. I just baked a package of lean turkey bacon, to keep on hand for this week. Nice add-in item for pasta salads also.

Place tinfoil over a large baking sheet and spray wtih Pam. Place strips of turkey bacon on the foil and bake @ 375 for 15+ minutes. I usually turn the bacon @ 10 minutes. Cool on paper towels; refrigerate. You can easily do a whole package and have available for breakfast or recipes during the week.

That sounds good! I love to make salads that have pasta, lots of veggies (broccoli, tomatoes, etc) and then toss in some chicken, turkey ham, etc. Makes a really tasty grab and go lunch.

I like to chop up some chicken breast and cook them and mix them with noddles and a can of mixed veggies. I can then heat it up for a hot meal, or serve it with just a little FF Mayo and feta cheese for a cold salad. Yum

heres something from spark.....spaghetti noodles, canned diced tomatoes(i get the oregano and garlic), great norhern beans canned, peppers, onion, mushrooms. cook the tomoatoes and other ingrediants together, i saute with a bit of olive oil, cook noodles. place the tomoato mix over noodles or i mix them together, but for measuring sake keep them separate, sprinkle grated chees over top and enjoy. it takes all of ten minutes and it is wonderful. sometimes i change the beans out and use a different kind. add any veggies really.

Ooooo! That sounds really good. Yes, it's important to keep George well-oiled. When hubby puts on a couple of frozen hamburgers, and I add my Boca Burger, it always sticks to the top (kind of like flipping a pancake to high and it sticks to the ceiling!) emoticon
I like my meals pretty simple too! Great idea!

I tried this, this past week and really enjoy it, maybe you will too.

Mahi Mahi Fillet (Costco)
2 tsp. canola oil
Jamaica Me Seasoned Pepper

I just oiled my George Foreman grill, seasoned the thawed fish fillet and grilled for 6-7 minutes. I had to turn the fillet frequently to keep it from sticking, however. I then created a sauce to put over the fish, and it turned out rather snazzy (if you like spice!).

2-3 Tbsp. Plain FF Yogurt
1 Tbsp. Johnny's Jamaica Me Dressing

I served the grilled Mahi Mahi with a side of steamed broccoli & cauliflower - keeping my carbs lower, but a portion of rice on the side would be good too!

I know we all have a common goal with increasing our health and fitness here on SP, although we probably have diverse plans to help accomplish those goals. Would anyone care to share favorite meal or menu ideas that help to increase their success along the way? Although I personally like to keep my meals simple, I do enjoy variety and new ideas! If you are willing to share, maybe we can encouarge each other as we strive towards "cleansing our temples" on this team!
