Our church takes a group every year to China and last year there was a gal who went who is Celiac. She found eating there was very easy. As said, you do have to watch for some of the sauces. I was actually going this year, but the trip was cancelled.

We lived in Hong Kong a couple of years and traveled to Guilin, Shanghai, and Zian. As for food, I was not diagnosed at the time (2005 to 2009) but still noticed there were a not of noodle dishes and dumplings. Are you going with a tour? If so, you need to ask the company where you will be eating (and what). If going on your own you can probably order most things. Dishes with brown sauce will have soy sauce and that has gluten; however, you can ask for white sauce which is also tasty, but no soy sauce. They have a lot of vegetable dishes, maybe seafood if traveling near the coast. Rice is a staple in most places, and fried rice is usually a good choice. Most wait staff speak English, or ask for someone who does so you can explain the concern.
As for what to take, a GF guru recently traveled to Italy and took Kind Bars with her, no chocolate though because she didn't want to deal with melted chocolate.

We are planning a trip to China this August, and my daughter is gluten intolerant. A bad reaction could make the time there miserable (!) Does anyone have advice for travel to China??? Just not sure what to expect or what foods (if any) we could pack and take with us.
