I did not eat breakfast - got up late and had to hurry to get ready for church.

Lunch was Schwan's Drunkin Noodles, corn, and salad.

This evening will probably be popcorn and some fruit - right now have bananas and oranges.

So I am making low carb cranberry muffins- toasted coconut meringue's... either a crockpot chicken dish- or blackened chicken w/ alfredo sauce for supper-

This is a very good Topic for many of us who need help with meal planning...I hope it keeps going.

Breakfast: 2 slices 100% whole wheat toast with 1 T mashed Avacado w/salsa on top each slice; seasoned with Mrs. Dash Citrus. Also had 5 whole strawberries, couple slices of turkey bacon &coffee w/T half and half.

Snack: Grapefruit sections dipped in sugar & cinnamon (I needed a sugar lift)

Lunch: Ham Sandwich on 100% whole wheat bread, smart balance mayo & mustard. Water

Not sure about dinner--I have some leftover salmon left. I will probably reheat that with a salad & fruit.

I have diabetes,so I will do a snack before bed.

Breakfast - 1 nectarine, 1 extra small banana, a small handful of blueberries, 1 cup of any of the Fiber One cereals, half cup of 1% milk, a cup of coffee and a tablespoon of coffeemate.

Lunch - 5 oz of baked salmon with 1 tsp olive oil, lemon, and a tablespoon of light mayo, dill weed, and lemon pepper, 1 cup of baked zucchini with a dash of salt and lemon, and a whole wheat english muffin with all-fruit jam.

I just wrapped the fish in foil after spreading the olive oil, mayo and lemon slices/spices on top and baked at 350*F for about 25 minutes. I sliced up the zucchini and also wrapped it up in foil and placed in the oven. After 20-25 minutes the slices come out tender-crisp and warm. Delicious to eat with the lemon that was baked on top of the fish! Easy, and with the foil, clean up takes no time.

Snack - Quaker granola bar (the Cocoa ones are yummy!)

Dinner .... still haven't figured out what I'm having tonight!

made a home made chicken pot pie last night.....it was simple and yummy
low sodium, low fat potato soup
can of mixed veggies
can of chicken
baking mix 1 cup
3/4 milk
1 egg

mix soup, chicken, veggies and 1/4 of milk in pie pan
seperate bowl mix baking mix, egg and rest of milk then pour over top of mixture
bake 30 min at 400

1/4 cup egg beater in microwave with a 1/2 slice swiss cheese & mrs. dash tomato basil garlic seasoning, 2 slices turkey bacon, 1 slice toast whole wheat with 1 tbsp homemade rhubarb jam & banana, 1 - 16 oz water

Breakfast Super Inca porridge (has steel cut oats and quinoa)
Snack an orange
Lunch Home made 66% whole wheat buns and egg salad to make a bunwich, apple for dessert
Supper?? Haven't decided yet, will fill in later
Supper now is later, I noticed a lot of the menus this thread are mine, so I looked through them and decided to make macaroni and cheese with a green salad and raw carrots and celery for the dh and dd and a chicken vegetable soup for me

Breakfast: 1/4 c southwest egg beaters, 1 tbsp salsa, 1/4 cup fat free shredded cheddar wrapped in a carb choppers tortilla, 2 coffees

Lunch: turkey sandwich on sandwich thin, 1/2 tbsp low fat mayo, cucumbers dipped in fat free ranch

Dinner: mahi mahi, brown rice and green beans

Snacks: yogurt & fruit

Here is my menu for the last week:

BREAKFAST: every day is the same!
2 coffees, 1/2 a whole wheat pita, toasted with a slice of fat free havarti.

LUNCH: On Sunday I cooked 2 recipes (in crock-pots)from sparkrecipes. Unstuffed pappers and a veggie soup (made barley on the side) Froze in 1 cup portions.
Alternate daily. with a salad or raw veggies and a 1/2 cip of barley or rice.

DINNER: (sat)Beef Stir-fry, (fri)roast beef, (thur)soup, (wed)Roasted chicken with perogies, (tue)broiled hamberger patty with a veggie stir-fry, (mon)teriyaki chicken breast, rice & corn, (sun) veggie soup that I made.

Dinner is usually homemade, healthy recipe - always served with a vegetable and a whole grain starch such as brown rice or whole grain pasta.

B- Special K Fruit and yogurt cereal w/ nonfat milk

L- 1 slice of rye bread w/ 3 slices of turkey and 100 calorie pringle pack of chips

D- Mexican chicken breasts with a salad. Which is one chicken breast w/ low sodium taco seasoning and salsa and a sprinkle of cheese baked in the oven. Really good got off the spark recipe page

Half a hamburger roll

Stir fried skirt steak with onions and gorgonzola cheese, I think about 6 oz of steak.

Roasted beets with water cress and garbononza beans

1/4 cup cole slaw

1Tbsp. hazelnut coffeemate powder
4 rice cakes
1/4 cup cottage cheese with pineapple
Lunch:
1tbsp Peanut butter
2 whole wheat breads
1oz ham +1 oz provolone
1/2 tbsp margarine
2 slices bread
2 ozs american cheese
Dinner:
1 cup Potatoe/egg salad
pomegranate pizzazz/berry mix tea
1 apple
Snack:1 orange
