Lunches for me are usually my biggest or medium meal of the day...so big salads, sandwiches and veggies, some kind of protein/brown rice.

My husband is getting ready to go back to second shift, so our lunch will be our big meal since it will be the only meal we eat as a family. It's going to take some adjusting to get used to it, I think.

Right now, I do things like sandwiches, salads, chicken strips, an occasional frozen dinner, etc for lunch. I'm a stay at home mommy, and I generally let my son choose (he's three) from between 2-3 options, and we usually have the same thing, unless he wants fish or corn dogs, and then I have a salad.

I always serve fruit and at least one veggie with whatever we have for every meal. It's the only way that I can even come close to getting the veggies in everyday. I'm not a big veggie eater, so I very rarely have them for a snack. Generally I eat 1 serving with one meal, and 2 with the other (none at breakfast). I'm working on getting a 4th in somewhere each day.

I had a salad with dried orange flavored cranberries, pineapples, and walnuts, top with slices of chicken breast and Kraft's Fat-Free Catalina Salad Dressing.

Homemade Sushi Rolls. The Nori is really healthy, you can make it with brown rice and put in all the veggies and different meats / fish you want and keep it low calorie.

I am trying new recipes all the time. I had the vegetable hamburger soup for lunch today. It was a recipe I got off this website. Very good and filling.

I like making "sweet and sour chicken" i get about 1/2 (before cooking) instant brown rice and one baked chicken breast. To make the sweet and sour sauce mix equal parts ketchup/vinegar/sugar (or splenda) and a squirt of honey. Pour about 2-3 tablespoons over rice and chicken. I also add some frozen mixed veggies to cook with the rice for a mock fried rice emoticon

I usually eat a turkey sandwich with light cream cheese (garden style) and chopped ovacado, sometimes I eat a salad or soup.

carrot and raisin salad (made this morning, it will be juicier tomorrow)
home canned dilled green beans

English muffin pizza, double wheat. I took one of those small jars of pizza sauce and portioned it out in a ice cube tray. Froze and sacked them puppies. One cube is perfect per 1 bread portion. I used one individual serving of string cheese, divided in 1/2 and then 'strung' over the 2 sides of the English muffin. There was plenty.
oh, and a cup of fat free milk.

Funny how if I'd just had the muffin and ate the string cheese by itself I'd still be eating, thinking I was starving.
Planning ahead saves the day ;)

Lately, for lunch I've been having a big slice of multi-grain fresh bread cut in half, spread with some fresh sheep's milk peppery cheese (goat cheese works too) and a half a slice of ham split between the two pieces. Open-faced sandwich for the win! Sometimes I add a little honey to the cheesy part before adding the ham. Delicious!

Then, I usually follow it up with fruit, yogurt, or vegetables of some kind. Fresh raw peas are great. So is a cup of strawberries and a cup of raspberries mixed together with some cool whip lite or lite whipped cream of another kind.

For dinner, we grill a lot of chicken and fish. I also make risottos and whole-grain porridge mixtures sometime. I always have a salad or wilted spinach or oven-baked zucchini chips or another vegetable with dinner too.

today i had an everything bagel w/ spicy pepper hummus.
i usually will have a sandwich and some fruit because it is easy to pack the night before or in the morning depending on when i have time.

I usually have a sandwhich with wheat bread or scrambled eggs with toast or soup that is low in sodium. When I go out for lunch I either grab a salad from the local pizzza place with fat free dressing, soup and a veggie from Boston Market or a sub from Subway, but I limit those since they are kinda high in soduium. I try to save my splurges for when we go out to dinner.

Salad w/fat free dressing; One dish Lean Cuisine.

Sometimes, a sandwich on wheat bread with 1 oz baked chips.

I try to add fruit at each meal. OH, and load sandwiches up with tomato and lettuce! It'll help you feel fuller.

I'm with CJOANALLEN - salad (with black beans, corn, carrots, hard boiled eggs and tomatoes - yummy and full of protein and fiber!), sandwiches, left overs. I made english muffin pizzas and heated them up for lunch... Mmmm stir fry, I usually make something sunday and eat it all week...

Today I had a sandwich of whole wheat bread, grilled chix, tomato, spinach, onion and a wedge of laughing cow cheese. I also had some baby carrots. Usually I have a wrap but decided to use up some of the bread at home before it goes bad.

I have light popcorn and a yogurt... or some sliced strawberries... or a pear... or a combo of those things. For me some protein would be good to add.
