I like the SparkRecipes quinoa concoctions, there's one with black beans I particularly remember.

Here's my "go to" lunch when I'm being a good girl. I make a batch that lasts for 4 days.

Ingredients:

1 yellow pepper
1 red onion
1 box cherry tomatoes (about 15 or so)
1 very heaped teaspoon of wholegrain mustard
150g tub Fage fat free plain greek style yoghurt
1 cup grated cheese (I use cathedral city light)
1 packet merchant gourmet red and white quinoa

chop up the pepper, onion and tomatoes, stick the quinoa in the microwave for a minute, and then mix everything together.

I use a quarter of the mixture each day, warming up that portion in the microwave for 2 minutes. Serve with a bit of chicken if you like for added protein.

It's sooo tasty, but once you've made the basic mix (the last three ingredients) you can put anything you like in it instead of the onion/pepper/tomato/mustard combo. My mum puts apples and grapes in it for a more fruity twist, but I'm faithful to my original setup. :) I think I got the original idea from a recipe on SparkRecipes, but it's morphed over the years having made it so often and added various things to it.
