When I was travelling in India years ago, they referred to eggplant as poor man's meat.
You know how mince and tomato sauce go well with it in moussaka, well I just make mince, tomatoes, onions, garlic and diced eggplant make a nice flavousome dish to top up spaghetti or rice or bulgur or quinoa or cous cous. Easy.
I sometimes just steam in microwave for a quick snack and add oil and vinegar and have it cold as a salad. Courtesy of Georgia's mum,lol.

Just thought I'd add this info as well.
Few Quick Serving Ideas

For homemade babaganoush, purée roasted eggplant, garlic, tahini, lemon juice and olive oil.
Use it as a dip for vegetables or as a sandwich filling.
Mix cubed baked eggplant with grilled peppers, lentils, onions and garlic and top with balsamic vinaigrette.
Stuff miniature Japanese eggplants with a mixture of feta cheese, pine nuts and roasted peppers.
Add eggplant to your next Indian curry stir-fry.

Hi Team,

I think its about time we got acquainted with Fruit and Veggies..They are such a very important part of your nutrition.
I would like you to research.... one Vegetable and one Fruit that are your most favourite.
I need to know what Vitamins and Minerals they contain....
There are so many Fruits and Vegetables that come from all over the world.

I am happy to accept the Vitamin and Mineral information from tinned or frozen Fruit and Veggies also.

Perhaps too .... you might like to tell me from which country each of your choices originated.
You have one week starting from the 7th -14 October to get back to me ...
