Here is a low carb recipe that I have always wanted to make -

"Greek Sushi"

Ingredients
Yields: 12
1 large cucumber
1/3 c. hummus
1/4 c. crumbled feta
1/4 c. chopped kalamata olives
1/4 c. chopped cherry tomatoes
Small sprigs fresh dill
Lemon wedges (optional)


Using a vegetable peeler, slice cucumber into thin flat strips. Lay slices down on paper towels to drain excess moisture.

On a cutting board or clean work surface, lay two slices on top of each other. Spread a thin layer of hummus on top of each slice, then sprinkle feta, kalamata olives, and cherry tomatoes on top.

Tightly roll each cucumber slice. Stick a small sprig of dill into each sushi piece. Squeeze fresh lemon juice on top, if using.

CHALLENGE: Plank for as long as you can and tell us how long you made it!

How does the game work?
A team member posts a small challenge.
Another member does the challenge and posts "Done! I challenge you to...", and so on.
Challenges can be related to:
emoticon fitness (squats, jumping jacks, stretching, crunches, walking...)
emoticon nutrition (eat a fruit, cook a meal, make a salad, find a new recipe...)
emoticon motivation (list 3 weight loss benefits, find 10 minutes of "me time"...)
emoticon SP ( post a comment on a team member's blog, visit someone's sparkpage...)
emoticon anything else you can think of, related to health and our journey to Onederland.
