Sounds amazing. Not sure if it's residual from the hives or the knock on my head, but my week's been all over the place. I bought lunch twice & I never do that. The canteen had grilled cheese and tomato soup on Wednesday when it was raining. Definitely perfect!

I took the leftover chicken and made a Asian inspired veggie soup! onion, garlic, chicken, chicken broth, yellow squash and zucchini and Asian hot sauce-with a squeeze of fresh lemon. yum!

Had that for breakfast--so good and low carb too. :) Great way to break my fast!

As you can see by the new team photo I went a little crazy last night. Cremini mushrooms, caramelized onions, Arugula (rocket), spinach, Feta and Parm cheese, thyme, olive oil and wild violets.

Cool beans!

Today, I made my own beef bone broth for the first time. Delish! Couldn't buy bones so I made it from little beef ribs, onion, cabbage, water, garlic, dill, parsley and bay leaves.

The asparagus here has been amazing this year, though none of ours has come up.

Last night I was going to make Tomato Soup and Grilled cheese sandwiches. I got the tomatoes blended & threw in some herbs and actually on the stove when I realized I didn't want that at all! I had some frozen Spinach and Ricotta raviolis in the freezer so my tomato soup became tomato sauce. Tossed together a little salad & there ya go!

I thinned out the remaining sauce and will have it for tomato soup at lunch today emoticon

So it finally felt warm enough yesterday to do a massive tostada. I went with the traditional pinto beans and piled on the fresh veg : lettuce, scallions, hot & sweet peppers, fresh corn right off the cob, cilantro. a dab of sour cream and a touch of avocado and plenty of salsa all on 2 corn tortillas. HEAVEN! emoticon

That simple BLT with turkey bacon is so good!

After getting word that my recent Latte obsession had pumped up my cholesterol I went home and made a mixed grain with wild rice and put sautéed shallots, garlic, celery, carrot and mushrooms over.
Made a green salad with blue cheese, dates and walnuts. A little olive oil and lemon juice on top.

I had a chunk of leftover ham in the feeder so I made a homemade crockpot soup with navy beans, onions, garlic, bay leaves, chicken broth, and parsley!

I love using leftovers and especially love navy bean soup!

I tried beets last night. I’ve had Homemade Pickled Beets and Harvard Beets, but I’ve never eaten cooked beets. So, I tried it last night and discovered that I actually like them.

I roasted 4 fresh beets in 2 Tbsp of Extra Virgin Olive Oil, 2 Tbsp Lemon Juice And 1 tsp minced Garlic. I sprinkled 1/2 Tbsp Coarse Salt And 1/2 tsp Ground White Pepper over top.

As I’ve never attempted to cook beets before, I basically guessed with what to do with them. They turned out pretty good...but I did learn why my mom used to cook/blanch the beets before processing them for the pickles. HooBoy, those little buggers are solid and hard to cut! Thank goodness I had the foresight to wear gloves otherwishes I’d have red hands, too. Haha! Talk about getting caught “red handed”!

Today was simple. Buttered grits and eggs for breakfast and a BLT with fresh spinach instead of lettuce. YUM

Sis and I enjoyed my brownies baked with lots of walnuts. Double yum

For dinner I made a 2 biscuit recipe and put Black Forest Turkey, fried egg, cheese on top. YUM! - except I just realized I forgot to track my egg so I should NOT have had that blasted cookie!

I was having a hard time with veggies too, but I love fresh spinach in a salad. Topped it with red bell pepper, sweet onion, olive oil, seasoned rice vinegar and crumbled cooked turkey bacon. I usually have it for a snack in mid afternoon when my appetite gets going.

Today, for breakfast, I sauteed red bell pepper, fresh spinach and chopped fresh zucchini and made an omelette out of it. That is a yummy way I get my variety of veggies into my day.

OOOh, that Bagel sounds amazing! As does the omelette and veggie soup.

So, for my week of being sick (JUST starting to feel really back to almost normal today) I made (and ate)
Spoonbread (My grandmother's recipe)
Lemon pudding (cooked it a bit long so it was eggy)
Quesadillas
Challah
Onion & Jalapeno Pizza
Apple Fritter bread
and Chocolate chip cookies.

I did NOT make banana bread with chocolate chips and coffee icing, which I seriously considered doing!

I'm still having a hard time eating greens.

We also use to enjoy breakfast out, but then decided that is a very expensive meal to eat out compared to what it cost at home to make. One week we ate breakfast out and paid more for breakfast ( eggs Benedict, an omelet and 2 coffees) than we did for a nice lunch for both of us later in the week. Eggs are still a pretty cheap meal. We also can cook a lot better at home as well.

We used to eat out for breakfast all the time, but it's hard to eat really healthy at breakfast for a reasonable price. They act like fruit is gold! I just can't bring myself to pay $3 or more for half a cup of sad, old fruit!

Agreed, when I go out to eat, I look for something I don’t usually cook or have at home. I love to cook and felI can cook better at home and control what ingredients I use.

YUM! I ended up making baked chicken croquettes but I wasn't happy with them. The roasted cauliflower was delicious!
