there is right around half a gram of carbs in one mushroom. the regular, white ones, anyhow.
put it in a cup, you might get 2 in a 2 quarter cup, so figure 1.2 grams carb for 2 whole mushrooms.
the discrepancy comes when you start slicing and cooking them. you can fit a lot more sliced in a quarter cup than whole. then you cook them and they shrink up, so you can fit even more. so yes..a quarter cup of sliced, cooked mushrooms is going to have a lot more carbs than 2 whole ones.
i just slice a couple up and toss them in a pan with butter. but i DO stick with about 2. unless i'm way under on carbs (i stick to about 10 total carbs most days). its enough..i get the flavor, the texture, and i dont go over on carbs.

whats the deal with mushrooms??? I thought i had hit the jackpot with a low carb food, but my tracker gives different carb counts for cooked vs raw, they go from less then 1 to 8!!...am I reading the tracker wrong??

Keto Mexican Chicken Impossible Pie

This pie is a quick and easy weeknight meal made with leftover cooked chicken and      pantry ingredients, just perfect for zero waste in the kitchen.  Get the great taste of tacos in this simple, family-friendly pie that bakes it's own crust.       

Ingredients      .

2 cups cooked chicken, diced    0 carbs
1 tomato, seeded and diced      3.6 carbs
1/2 green capsicum*, seeded and diced      1.5 carbs
1/2 cup diced onion      2.6 carbs
1 green chilli, deseeded and chopped (optional) .5 carbs
2 tablespoons taco seasoning     9.3 carbs
1/2 cup coconut flour      18 carbs
1 cup pouring cream      4.3 carbs
2 eggs      .3 carbs
1 cup shredded cheddar cheese      .6 carbs

Method:     

Pre-heat oven to 200 degrees Celsius.  Mix chicken, onion, capsicum, tomato, chilli and taco seasoning. Put into a large, greased quiche or pie plate.  Mix milk, eggs and flour and pour into pan. Sprinkle with cheese. 

Bake for 30 minutes until top is golden and custard is set.

Ingredients

- 2 teaspoons lemon juice
- 1 large egg
- 1/2 teaspoon dry mustard powder
- 1/2 teaspoon sea salt
- 1 cup avocado oil (or use extra virgin olive oil, light)
Instructions

1. To a tall, wide mouth mason jar add the lemon juice first, then the egg, seasonings, and finally the oil. Let the ingredients rest for 20 seconds or so.
2. Put the immersion blender all the way at the bottom of the mason jar. Turn it on high speed and leave it at the bottom of the jar for about 20 seconds. The mayonnaise will immediately begin to set up and fill the jar.
3. After the mayonnaise is almost all the way set, slowly pull the immersion blender towards the top of the jar without taking the blades out of the mayonnaise. Then, slowly push it back towards the bottom of the jar. Repeat this step a couple of times until all of the ingredients are well well incorporated.
4. Taste and add more salt, if desired.

Ultra thick, creamy, speedy and with no fancy appliances required!  This homemade paleo and keto mayonnaise has never been easier, or  better. 
Course Sauces, Spreads
Cuisine American, French
Keyword dairy free, gluten free, grain free, keto, low carb, paleo
Prep Time 5 minutes
Total Time 5 minutes
Servings 16 tablespoons
Calories 94 kcal
Ingredients

- 1 egg yolk
- 2-4 teaspoons lemon juice freshly squeezed (use larger amount for a lemony mayo)
- 1 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt
- 1 teaspoon water
- 1/2 cup avocado oil
- 1/4 cup extra virgin olive oil
Instructions

1. Add egg yolk, lemon juice, mustard, salt and water to a medium bowl and whisk until thoroughly combined. 
2. Whisking  constantly (you can use the whisk attachment in your immersion  blender!), drizzle in a few drops of your oil at a time. Your mixture  should be opaque, with all the oil incorporating into the mixture. Once  your mixture emulsifies (i.e. begins to thicken), you can increase the  speed of oil a tad into a small stream rather than drop by drop. Keep  whisking and adding in the oil until a rich and thick mayo emerges  (always best to go slower the first time around!). 
3. Keep stored in the fridge, in an airtight container, for about 3-4 days.

Keto Shortbread Cookies

6 tablespoons of salted butter, softened
1/2 cup sweetener (I used Natvia)
1 teaspoon vanilla essence
Zest of 1 lemon (optional)
2 1/2 cups of almond meal/flour

Beat butter and sweetener together till light and fluffy
Add vanilla essence and lemon zest and beat in
Keep beating and add almond flour, half a cup at a time. The mixture should press together easily when you have incorporated all the meal.

Form into small balls (I use a small spoon) and place on baking paper lined sheet. I usually get 25 or 26 balls
Press the balls down with the back of the spoon to form a little dish
Bake in a 350F/160C oven for 19 -- 12 minutes, till the edges start to go golden
Allow to cool on the tray before handling
They freeze well
I calculate 2 carbs per cookie
I got the recipe from the Four Ingredient Keto Cookbook.

they sound great change!! 4.2 carbs is a bit high, but if i planned..i could fit it in...i'm not much of a cauli lover, i detest cauli mash, but these sound really good. next time i'm at the store i'll get the cauli..i have everything else on hand. or..i have most of a head of fresh cauli (i DO like it raw might rice it myself and try...thank you!!

Bab~ those meat scoops sound good! What a fun idea!

My recipe for Fauxtato Tots: (sorry, I forgot to post it the other day)
(makes 24 total ~ 4 servings of 6 tots)

1 (12 oz) bag frozen riced cauliflower
2 Tablespoons grated Parmesan cheese
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons extra-virgin olive oil
1/2 cup shredded cheddar cheese

Preheat the oven to 375*. Have a 24-cup mini muffin tin ready

Heat the frozen riced cauliflower in the microwave as instructed on the package. Drain and pat with paper towels to remove any excess liquid.

In a large bowl, mix together the cauliflower, Parmesan, onion powder, garlic powder, salt, and pepper until fully combined. Add the olive oil and cheddar and mix together completely.

Spoon the mixture into the mini muffin tin, dividing evenly among the cups. Using a fork, press the mixture down into each cup. Bake for about 20 minutes, until the tots are golden brown. Serve hot.

Store any leftovers in a covered container in the refrigerator for up to 2 days or in the freezer for up to 2 months. To reheat, defrost if frozen, and microwave for 30 to 45 seconds.

Meat scoops . I did chicken today :

10 ounce chicken breast choped
Half cup mayonaise
Tablespoon bacon grease from breakfast
Two ounce chopped celery
One ounce chopped yellowbell pepper
Tsp onion powder
Salt and pepper
Chill one hour or more
Scoop half cup portions on a bedof lettuce . Makes 5 half cup servings.

I tried an interesting recipe today . Mushroom stuffed chicken.
One roaster size chicken.
8 ounces mushrooms chopped
3 tablespoons butter.
Sauté mushrooms
Add salt and pepper to mushrooms
Spoon mushrooms into cavity
Add pepper to top of chicken .
Roast at 400 for 20 minutes
Reduce temperature to 375
Roast for three hours
Basting once or twice during roasting

Bab i did that with one called bacon and butter. most recipes have more carbs in a small serving than are recommended in a full day. total waste of money.

there are 2 cookbook authors i highly recommend..the first and in my opinion best..anything by Carolyn Ketchum..her website is below i got the books on amazon (there are 6 titles)

really good cookbooks worth your money..anything from Carolyn Ketchum..she has 6 cookbooks out...there are some recipes with more carbs than i would use, but most are around 5 and under.

the other, not as good but still ones i bought and use a lot..Maria Emmerich. she has a bunch of cookbooks out too.

no clue with pea protein...peas arent keto as they are legumes. they are probably pretty high? i order my protein powder off amazon.
the chicken has zero carbs, the whey protein powder the kind i have has 2 grams in a scoop. Paprika has 4 g carbs in a tablespoon...garlic powder has 7 grams in a tablespoon, one egg has .6 g
you have to get the counts for what you used, add them together, then divide by number of servings. so the way i do it about 4.5 grams in the entire recipe...and a pound of chicken makes enough for 5 meals for me, so its around 1.25 carbs a serving. i would think the pea powder probably has around the same carbs but i dont know.
anything you make, get the nutrition for each ingredient, add them all up then divide by your serving size. 3 oz of meat is plenty for me, so out of a pound i get around 5 servings. others eat more..or less. so its hard to say..plus i dont know the ingedients you used or the quantities..

We tried the chicken nugget recipe and they were awesome! DH was very happy, since he's always had an obsession for fried chicken. Here in the back woods where I live it was hard to get protein powder, the only one I could find that wasn't flavored chocolate or vanilla was some Pea Protein powder... so I got it, and it worked just fine. What is the carb count using this recipe for, say, 4 oz of chicken?

Collagen is the protein in gelatin. Collagen peptides are what you get when you snip the protein into smaller pieces so it dissolves more readily and doesn't gel.

Joni Great questions!! heres how i do the gravy..you can play around with it and/or add or delete what you dont like. i never measure on the gravy, sorry..more because i never know how many drippings i'll have!!

so..i add a little butter if there isnt a lot of drippings. for, say a cup of gravy i will add in a couple ounces of cream cheese and heat and stir until its melted. a stick or immersion blender comes in handy here if you have one..if not just use a whisk.
now..i pour in heavy cream to the amount of gravy i want. and heat it..stirring all the time. taste it..adjust seasonings. you can use just broth for the "base", or drippings or look for no carb no bad ingredient bouillon and use a water base.
so..then for me its not thick enough.i like thick gravy. so..i mix maybe a teaspoon of butter with a quarter teaspoon of xanthan gum..into a paste. then stir that in..whisk constantly. yes i said 1/4 tsp..this stuff is potent and if you use too much you get a gloppy inedible mess. you can always add more. alternatively you can sprinkle it over the top, but its easier to mix in and distribute if you do the butter thing. when its thick enough for you, you are done!! store in the fridge.

Chickie nuggies (sorry my kids have called them that forever, and when baby yoda said it..well..

cut boneless thighs or breasts into strips or bite sized pieces. and again..this is where i do it by feel but will try to get the measurements right..

to a half pound of chicken:

1 egg, beaten to dip chicken in


the "breading"
about 2 tablespoons unflavored protein powder
1/4 cup grated parmesan
1/4 tsp garlic powder
1/4 tsp paprika
1/4 teaspoon ground black pepper

mix well together.

now, dip the chicken pieces into the beaten egg, then roll in the breading. you can put them in a bag and shake, i pour the breading on a paper plate and roll them around with a fork. just be sure they are all coated. egg left over? double dip them..it just makes them crunchier!

now. heat up some olive oil in a skillet. maybe an 8th to a quarter inch deep. i always put in a couple tablespoons butter, too, for better flavor.
make sure its hot..toss a piece of the chicken in..if sizzling its ready to put the rest in. put all the pieces of chicken in, dont crowd too much. let them cook, you can lift and check underneath.when they are golden and crispy flip them over and cook on other side. be careful not to burn...and when you think you are done grab the biggest one and cut into it..make sure there is no pink you dont want overdone chicken!!

Joni I make my own syrup from my trees..and its one of my top 3 sadnesses with keto. theres nothing...nothing that will be like real maple syrup. but i make something that is at least somewhat satisfying. take some butter and melt it. let it brown..then stir in some bochasweet or allulose..if you are just making one serving use swerve, but if you want to save some the other 2 natural sweeteners wont crystallize like erythritol.
now put in some maple flavoring to taste...then add some heavy cream. I dont do measurements on all this..its never going to be the thin consistancy of real syrup, but adding the cream makes my mind think its a little like maple cream.
its not the ideal...but better than the "sugar free maple syrup" you get in the market. and some will tell you lakanto maple is good. they obviously have never had real maple syrup..it tastes more like molasses than maple.

The above helps. but some things will just never be a good sub for the real thing. sorry...real maple girls like you and me know....not much i miss,,,but maple i do. and when i'm boiling i literally just stand there inhaling to get my maple fix...lol.

2 ounces cream cheese
1/4 teaspoon baking powder

Whiz in a blender or magic bullet—cook as usual in a waffle iron. Makes 1 serving of about 6 small size waffles. You can also use it to make pancakes..if you don’t use an egg ring they will be thin but delicious

chayote has 6 g carbs in a cup of cubed, (132 grams). so be really careful if you use it. i've never had it so cant comment on flavor. i had to laugh this morning when i read someone saying please, please dont tell me radishes or cauliflower taste like potatos. they dont.
if you like them great...but there just isnt anything thats ever going to be potato-y enough to be called potato. i did the fried radishes and found them close in texture to roasted potatos, but bitter and nothing like potato taste.
for me, i'd rather do without. but as always...try. see if you like them, they may be something that is great for you!!

Chayote squash sliced thin and fried with a bit of bacon grease and onion is as close to "Home Fries" as I've been able to get. There is also a French Fry Chaffle (Keto) recipe put out by KetoLiciousLife on YouTube. Those are pretty good too. They use radishes that have been boiled to soften, then pan fried with a hint of seasoning then ultimately added to the Chaffle ingredients. I like them.

people say radishes are good for this. i tried and didnt care for them at all..just another thing that doesnt taste a thing like potatos. but if you want to try, just fry sliced radishes as you would a potato. some use daikon radishes instead of the red round ones to get the shape more like them.
i personally prefer not to try to make anything like a potato...they just dont measure up in my opinion.

ps others have tried turnips, too...again they report the same thing..wont be the same..and if you try either? watch the carb count..

KD, bacon mayo does sound gross.

Night, I'm sorry to hear you are allergic!!

I found some of the olive oil stuff at the store, but wasn't sure if that was Keto or not, wanted to make sure. The Keto club 'sandwich' was really good and filling! I got some fresh parsley from my Aerogarden and made a salad of tomatoes, cucumbers and parsley (made with lots of salt and a little pepper, let it sit for a while and the flavor really comes out, it does not taste overly salty either, but you end up using more salt than you would think, just to be able to taste it) that my BIL taught me how to make, he is from Turkey and it was a common staple in his house. It can be made with parsley or cilantro.

I found three great looking books online that the library has, one was from an article that someone posted on I think this team, one on of the beginning posts of things to look up/read.

I found it at Whole Foods. Trader Joe's probably has it too - maybe even Costco.

I have to say I did not like the way it tasted, so I used it up and did not buy more. I know soy bean oil is not a good ingredient, but I use it infrequently and I'm okay with that.

Edited to add some people make bacon mayo. I found that gross as well. There are many recipes for freshly made mayo (eggs and olive oil I think?) that I may try one of these days when I have a need for a lot of many. Right now, I'm just using a spoonful here and there.

Night, thank you for the tip about the fat bombs, most of the ones I had found before either looked awful or were peanut butter. I managed this time to find some great sounding/looking ones!!

KD, that bread looks yummy!

Where do you find avocado mayo? I looked all over my grocery store, and it's a pretty diverse store, the only one around here that actually had beef shanks, and could not find it. It's called for in a Keto club "sandwich" (lettuce, instead of bread, of course, yummy!). I found a great dijon mustard that I love, but not the avocado based mayo...

here is a trusted calculator that will show you the calories you should be getting. put in your current weight and info. leave exercise alone unless you are a regular athlete. you will, i'm sure, be surprised.
one of the things most books and sites havent updated is the calories. it used to be thought you needed to eat at a deficit. they have done testing and studies showing that isnt so. you need to fuel to keep your metabolism revved.

sorry about the symbols. i was on my phone and for some reason i phones do that. its just things like commas and all.

just type in keto fat bombs..you will be inundated with them!!

on the swerve...i personally dont count it, normally i have it just in my tea. it supposedly passes through your body unchanged. but everyone is different and some cant have it at all. many count half the carbs in it. if you are using 8 of your carbs on that you are doing fantastic!!

Your response has some strange symbols in just the wrong places, what kind of fat bombs should I look up?

I'll start cooking my eggs in butter. that will help a little at least. I do roast all my veggies that I eat in olive oil and/or sesame oil, but I'm not having any today.

8 of my carbs actually came from having Swerve in my coffee. I think I'm going to either learn to have my coffee black or only drink one cup a day instead of two. That will at least cut it in half.

I am only 5 foot 1 inch, LOL, but still need more calories than I'm getting. I think once I go shopping and start eating the Keto recipes that I've got I'll do better, I've got my protein, I'm under 20 g carbs, I just need to be eating more calories, especially since I'm working out almost every day now.

Keto clarity is a great book but some info is outdated..
I’m assuming most of your carbs are coming from veg—I would cut that.
Cook everything in butter, olive oil, coconut oil. This will up your fat and add zero carbs.
Google “fat bombs” there are many recipes for them.
On the cals..unless you are 4 feet tall you should be getting a minimum of 1800 cals.
I spent my first keto months stressing to get my percentages right. Now I don’t worry about them—I just do the formula under 20 g total carb, 50-60 grams protein and the rest fat.

What are some good fat bomb recipes that don't have much carbs?

The almond butter fat bombs I made have roughly 4 carbs each!! I'm finding I'm short on calories and can't fix that till next payday when I can do some major shopping and have done my research on recipes (I'm signed up for a few places that send me a recipe for meals for the whole day once a day, plus I have the cookbook for Keto Clarity) I was thinking some fat bombs might be an inexpensive way to add some fat and some calories to my day without adding too many carbs. I'm at 19 carbs for today (I like to plan my day out in the morning) but only a little over a 1k calories and 71g of fat. I don't know how much fat I'm supposed to be getting, I haven't read that far in the book I'm reading about Keto, I think I'll do some research today on the internet and figure out some rough figures. But I saw on here that you should try to stay under 20g of carbs? It took a lot of shifting things around to keep it under 20!! Any ideas would be much appreciated!! I've only got to make it a week on a very short budget, then I'll be able to go grocery shopping and get better Keto diet foods.

Thank you so much! I've got the book in my wishlist and bookmarked the websites and signed up for their newsletters!

I started a notebook taking notes on all I'm learning, and a folder for what I can print.... I think I'll start a new folder just for recipes and I'll write on the recipes and give them stars once I've tried them and put what I think of them and decide if I'm going to keep them or not.

Thanks so much for your suggestions! I'm going to try to make it to the store today to get some Keto approved sugar substitute for my coffee, I want to go full Keto on Sunday, that is when I'm starting doing a 90 day tracking 5 goals and one of them is Keto (my main ones are exercise and Keto) and I want to make sure I can stick to it!

I'll have to check out my Walmart, that will be cheaper, Amazon jacks up the prices for 'free' shipping!

I really want to find a good cookbook for Keto, what would you recommend? I'm going to try to get to the Library next week and see what they have, but I'd like to find something that other people on the team have tried and know is a good cookbook.That way I can just buy it and be done with it! I prefer to go on other people's recommendations than try recipes that aren't any good and waste money. The cookbook I have I'm going to trust, well most of the recipes anyway, is the Keto Clarity companion book Keto Clarity Cookbook. It has some amazingly yummy looking recipes that I want to try. DH was going on about the breakfast pizza I showed him and I had to explain that there was no crust, it was Keto, so no crust, and he got flabbergasted and decided he didn't like the look of it anymore, LOL.

But anyway, what are your tried and trues? Whether they are websites, Pinterest boards or (hopefully a few) actual cookbooks?

I found a small bag of Allulose on Amazon for not much, so I will give it a try. I'd like to try Swerve as well, just to make a comparison, but that will have to wait. I liked that Swerve had brown sugar and confectioners sugar as well, and since I am a baker and have a sweet tooth, that will come in very handy

But since I'll just be using the Allulose for my coffee, I think I'll splurge a little on it, lol.

Swerve is the brand name for Erythritol. i dont find it has an aftertaste but some get a "cooling effect". then theres monkfruit..but that too is mixed with erythritol.
Allulose and Bochasweet are probably the closest to sugar. they are quite expensive, i use them for ice cream as they dont crystallize and harden in things like sauces (cranberry, caramel) or cause ice cream to be unscoopable. they would be my first choice for the closest thing to sugar, if you can afford them. they are interchangable..i buy allulose more frequently than bochasweet. Amazon carries both.

What is a Good sugar substitute that doesn't have that horrible aftertaste? I have drank my coffee the same way since I was 15 and I'm about to turn 40. I managed to get my sugar down from 2 tbsp to 1 tsp (I think that is awesome!) and I've managed to really reduce the amount of coffee I drink. I don't put sugar in my herbal teas, only in chai when I have it and again, only 1 tsp. I'd like to get rid of the sugar altogether, but most sugar substitutes I've tried make me gag (literally). Someone mentions something called Swerve further down on this post, and I've never heard of that before. Does that have an aftertaste? Let me know what your favorites are or what is Keto approved, I'm willing to try a few different ones to get the one that works for me! I know that sugar has to go! I already don't drink sugar in my iced tea (how very unSouthern of me!) I've been drinking it with un-sweet with lemon for a long time now.

i dont have an air fryer so i dont know this one? i do make pizza once in a great while..i use the Magic Mozzarella Dough from that site for it.
you can trust her numbers for carbs, etc...shes a stickler for that stuff...and i've only had one of her recipes i wasnt thrilled with..the kentucky butter cake. people rave about it..i thought it was just alright. the rest, though...really, really good. i have all her cookbooks..they are on amazon just type in Carolyn Ketchum

Peanut butter is ok in small quantities many use it..be sure to get no sugar though. Almond butter is better—again no sugar.
Do what you need to on the protein—I’m not familiar with the bypass diet but you have to do what’s right for you!

What is a good book for beginners starting on Keto? Or a good Pinterest Board? I tried Keto before, but I'm pretty sure I didn't quite do it right, I didn't count macros or anything like that, and I really want to do it right this time. Any book I can buy or check out from the library, or Pinterest boards that have good recipes.... Last time I just checked out a few basic books on Amazon Kindle Unlimited and most of them had conflicting information.

I could not find good protein ball recipe, (something made with my protein shake powder) so I'm going to get some almond butter and just use the protein powder and almond butter and maybe some almond slivers in the balls. As far as fat bombs go, I kept finding recipes that had peanut butter in them!! I'm going to make the crab rangoon ones next week (we go shopping on Thursdays, so have to wait till then to make anything new) Do you have a Pinterest Board or book recommendation for finding recipes for fat bombs? Or a tried and true easy fat bomb (something without coconut, I do not like coconut and my MCT oil has coconut in it and that is about all I can stand!) recipe?

Sorry to ask so many questions, I just really want to make sure I'm doing this right! And get good books, not the conflicting books I checked out for free last time!!

I'm a gastric bypass patient, so I need a little bit more protein than your average person, have to follow my dietitian's advice, she recommended Keto, but with a bit more protein.

Honey and oatmeal are absolute no's. Peanuts and peanut butter are technically not keto (legumes not nuts) but many people make room for a tiny bit of it.
Google fat bomb recipes for things that are more compatible with keto!

Looking for some protein energy ball recipes... the ones I've found have peanut butter, protein powder, honey, oatmeal... I could go on!! I know oatmeal is a no, honey... Is that a no? It would be a binding agent, or could I make them out of just peanut butter and protein powder (chocolate)? Oatmeal is a double no for me since I am a gastric bypass patient, I just can't break it down. But I love having the protein balls as a snack for when I get a little hungry and need just a tiny something to get me to the next meal, having it be a fat bomb or a protein ball is great (I plan on making the crab rangoon fat bombs next week!! but have the stuff for the protein balls now, except the honey, but don't know if honey is okay or not...)

really? i live in a small town and its in mine right next to the confectioners sugar. ask an employee..they might put it with the diet stuff. if not, i get it from amazon in bulk..i actually get anthonys brand in the 5 pound bags as they are cheaper. just type in erythritol

found a post for a "big mac" salad. sooo. good, taste just like the hamburger without the bun, today I was in a pinch and ate it without the lettuce still really yummy.
hamburger cooked
diced pickles (very few)
tomatoes (you can leave these out)
chopped lettuce (you can also leave this out)
shredded cheese.

sauce:
-mayo
vinegar
small amt of chopped pickles
paprika

NIGHTSKYSTAR - That's why I had my son make them into four instead of just two. emoticon I can look to see where I'm at for the day and if I'm below I can always eat two instead of the one. Plus they last longer.


To store I wrapped each one in a paper towel and put them in a ziplock baggie. I left them in the paper towel and reheated in the microwave for about 15 seconds on each side.
