Sausage Muffins
These sausage muffins are just like the ones your mom used to make with pancake mix. Except they are healthy. And more flavorful. With a combination of sweet and hot sausage and a generous amount of cheese, they can be a meal all by themselves.

Course: Breakfast, Side, Side DishCuisine: American Servings: 16 muffins Calories: 206kcal



Ingredients
16 oz Premio Foods Sweet & Hot Italian Sausage (Combo Pack)
1.5 cups almond flour
1 tbsp coconut flour
1/4 cup sour cream
1 egg
2 tbsp butter
1 tsp baking powder
1/4 tsp salt
1 1/4 cup shredded cheddar cheese
Instructions
Heat a frying pan over medium heat. Remove the casings from the sausage. Add the sausage to the pan and cook until browned, breaking into small pieces as it cooks.
Preheat oven to 350. Spray 16 wells of two muffin tins with cooking spray.
Combine the flours, sour cream, egg, butter, baking powder, and salt and mix until smooth. Fold in 1 cup of the cheddar and the cooked sausage.
Divide the dough between the prepared muffin tins. Sprinkle on the remaining cheddar cheese.
Bake for 25-30 minutes or until golden.

Minutes to Prepare: 30
Minutes to Cook: 30
Number of Servings: 8

Ingredients
12 oz Hormel SPAM (diced) and 2 Tbs dehydrated onions fried in 4 Tbs butter till brown
2 cup Spinach, frozen - thawed- and squeeze the water out- spread on top evenly
12 large Egg (whisked) pour over evenly
2 cups grated Cheese - spread on top of all.
Directions
FRY spam and onion---- then layer in rectangle pyrex baking pan.
Spam & onion, spinach, eggs, top with cheese Bake 350 30 min

*** I like a little sour cream on top when serving. YUM!!!

Something I use to enjoy before I gave up dairy:

To be picked up and eaten with fingers- Cream cheese/ onion/Lox - sans bagel.

Take a small slab of cream cheese, sprinkle with "everything Bagel" spice
and lay a super thin slice of onion on top
then a thin slice of Nova Lox on top.

Pick up and eat
Delicious but NO Bagel.

haha James. i used to use them for jello molds, individual meatloafs, i froze single servings of potatos etc in them.

just remember to grease them well..and i call them pucks because they remind me of hockey pucks. i think the politically correct term is egg muffin cups..but i like pucks better!

using my muffin tins to make egg pucks, ... that does sound good. A little perverse ... using something that makes high carb muffins to make low carb Keto stuff.

i make "egg pucks" easy to grab one or 2 and go on the run..30 seconds in the microwave they are warm and filling!!

grease well a 12 cup muffin tin
brown 1/2 pound breakfast sausage--break up as well as you can
beat 8 eggs in a bowl, stir in 1 cup grated cheddar and the cooked broken up sausage

stir in mushrooms. small pieces of broccoli. chopped spinach. or any other veg if you want..they are great without!!
divide mixture into the 12 muffin cups. bake at 350 degrees 25-30 mins. run knife around the pucks and remove from pan immediately.
store in airtight container in fridge.
One puck- without veg=

0.7 carb

12 g fat
8.8 g protein

Here is a cut/paste of a post by Kathleen (KATHLEEN624) on the main discussion. I agree with her, don't start with the idea of a standard breakfast (cereal with milk, toast, bacon, eggs, muffin ...) and cut out the non-Keto things, that will leave you with bacon and eggs only.

As Kathleen said ... try something completely different for breakfast.

Make a large Sausage Quiche - just heat each piece as needed in microwave for breakfast!

Cheeseburger on plate

Egg bombs ( deviled eggs with butter and mayo)

Sausage fried in butter

Sliced steak fried in butter

Keto flaxseed mug bread ( takes 2 minutes) then toast and then broiled with Swiss on top.

Keto mini meatballs put in Alfredo sauce and top with Swiss cheese - microwave.

JAMES' famous KETO Waffles

HOLLY's incredible Keto Crepes.

You get the idea. Any food goes for breakfast even left over from dinner.

Bacon cheeseburger casserole
Nutrition Info
Calories: 542.1

Ingredients
0.25 cup Sour Cream
12 medium Egg, fresh, whole, raw
2 tsp Pepper, black
2 cup, chopped Onions, raw
2 lbs Ground beef, lean
1 lb Bacon
4 cup Cheese, sharp cheddar, grated
3 tsp Siracha Hot Chili Sauce
1 tsp crushed red pepper flakes
Directions
Brown beef, bacon, onions layer into casserole dish. Layer pepper, Siracha, red pepper flakes, and sour cream. Whip eggs pour evenly and top with cheese.. Bake 350 for 20 min.
***Make as spicy or as mild as you like***
Serving Size: 10 servings

Amended servings. Didnt realize it until I was cutting it up and putting in freezer bags.Love,

Bacon cheeseburger. Local restaurant has on menu. Thinking about trying on a "hungry" day. Bunless, of course. Side of sliced tomatoes instead of tater tots.

Oh, deviled eggs, yum. My recipe is real mayo, bit of yellow mustard, dill weed to taste, tiny shot of stevia (I use pocket squeeze bottle). Mash egg folks with ingredients and fill egg white halves. Sprinkle paprika on top. Adjust ingredients to your taste. I like tart. Yummy idea for breakfast.

Deviled Eggs:

Mix Well - 2 egg yolk, 2 TB real mayo, 1 TB soften butter fill egg whites. ( pink salt to taste)
Makes 4 deviled eggs.
