Rosie this is a salmon mousse recipe - it's delicious!! My sister-in-law's son made it for Thanksgiving this year, and it was so well received he made it again for Christmas. And I found a bag of it in the freezer a few months later, and it was still delicious!!

4 8 oz packs cream cheese
2-4 cups smoked salmon
4 large eggs
1/3 cup HWC
1 green bell pepper
1 cup white or yellow onion
1 Tbsp (or more) cracked black pepper

Finely chop onion, bell pepper and salmon. You can use a food processor to do this. Leave cream cheese out for 30 minutes to soften. (or put in microwave for 20 seconds). Sweat onion and pepper mix with dab of butter on medium heat for 3-5 minutes. Don't brown.

Preheat oven to 350 degrees. Cream eggs into cream cheese. Add onion and pepper mixture. Mix until thoroughly combined. Add 1 Tbsp cracked pepper - more if you like.

Butter inside of 10 inch spring form pan. Press Ritz cracker mix into bottom and sides to make crust. (I would eliminate this step for keto mousse) - if you are going to use crackers, 1 cup crackers, 1/4 cup melted butter mixed.

Wrap spring form pan in 2 layers of heavy foil to prevent leaks. Place spring form pan in a large roasting pan in the oven middle rack. Add boiling water to roasting pan until 3/4 way up side of spring form pan.

Bake for 1 to 1.5 hours or until firm and there is deep brown crust on top.

I am personally going to experiment with making it in a baking pan, not a spring form pan, and see how that turns out. After it cools, put in refrigerator to chill and serve chilled. Oh my goodness. It's so so so good.
