YUM!! Some yummy recipes I can't wait to try!

I made this last night and it came out well...I forgot to turn it down after trying to ‘preheat’ the crock, and it was done 4hr @ high. I omitted the tomatoes (personal preference), and green pepper, used venison round, and I think I will use (small) whole mushrooms next time. I’m not sure about serving this over noodles but I definitely think it would go well with steamed broccoli either on the side, or tossed in before serving.

Smothered Round Steak

Prep time: 20min
Cook time: 7 hours
Makes 4 servings

1/3c AP flour
1 tsp salt
1/4 tsp pepper
1 1/2 lbs boneless beef top round steak, cut into 1 1/2-in strips
1 lg onion, sliced
1 lg green pepper, sliced
1 can (14.5oz) diced tomatoes, undrained
1 jar (4oz) sliced mushrooms, drained
3 Tbs soy sauce
2 Tbs molasses
Hot cooked egg noodles, optional

In a lg resealable plastic bag, combine the flour and S&P. Add beef and shake to coat. Transfer to a 3-qt slow cooker. Add the onion, gr pepper, tomatoes, mushrooms, soy sauce and molasses

Cover and cook on low for 7-8hrs or until meat is tender. Serve with noodles if desired

ooops I don't see why I didn't see the recipe the 1st time in your post, but I didn't.

2 cups oats
1 chopped apple
1 tsp cinnamon
added 1 tsp brown sugar
4 cups of water

Cook on low overnight.

I tried the Apple Cinnamon Crockpot Oatmeal from the Sparkpeople calender: Combine 2 cups oats,1 chopped apple{I used a jon-gold} 1 tsp cinnamon, added 1 tsp brown sugar{sweetness} and 4 cups of water. Cook on low overnight. Serves 4 170calories,2g fat. I emoticon this for breakfast on the weekend.

WOW! Bananas...I never would have even thought about using bananas. What kind of flavor does the bananas give the meat?

Pork Roast
3 golden potatoes (fist sized), sliced into 2" cubes
2 Large carrots, sliced into sticks
3 Bay leaves
1 lb Pork Roast, boneless, trimmed, inexpensive
1 can of low sodium, Mexican style stewed tomatoes
Red Pepper flakes, to taste (1/4 tsp would be a good kick)
Fresh ground pepper on top of roast
--Cover and cook on high for 3-4 hours. Low for 6-8. I am usually impatient and will put the roast in the micro to partially thaw. This extends my cooking time because the roast is not totally thawed, but I cook it until it is falling apart. I serve it with horseradish.

Sweet & Sour Chicken or Pork

If using pork tenderloin, cut up into bite-sized pieces. When using chicken I prefer skinless.

1 small onion, cut into pieces or rings
(I put the onion on the bottom of the crock pot and
then place my chicken or pork on top)
4-6 chicken breasts or thighs (skinless)
8oz - Russian dressing
(If you can't find Russian use Catalina)
6oz - Apricot Preserves
8oz - Pineapple Chunks or Tidbits (drain juice)
1 pkg - Onion or onion mushroom soup mix (low sodium)
1 cup - White Rice (family size determines how much)

The four ingredients together, pour over chicken (or pork) and cook on high for 3 hours.

Serve over white rice, emoticon and ENJOY this tasty quick meal.

I was just curious - do you leave the peels on the bananas? I take it the bananas are for tenderizing the meat. I just want to make sure I use the bananas correctly. If you would reply I would be grateful. Thank you. emoticon

Cheesy Crockpot Chicken

2 lbs. boneless skinless chicken breasts
2 Cans 98% fat-free cream of chicken soup
1 can cheddar cheese soup
1/4 teaspoon garlic powder

Cut chicken into bite size pieces. Put chicken in the bottom of the crockpot. Add rest of ingredients on top. Cook 8 hours on low. Serve over rice or noodles.

Southwestern Chicken

2 15 and 1/4 oz. cans corn, drained
15 oz. can black beans, rinsed and drained
16 oz. jar chunky salsa, divided
6 boneless, skinless chicken breast halves
1 c. low-fat, shredded cheddar cheese

1. Combine corn, black beans, and 1/2 cup salsa in slow cooker.
2. Top with chicken. Pour remaining salsa over chicken
3. Cover. Cook on high 3-4 hours or low 7-8 hours.
4. Sprinkle with cheese. Cover 5 min. for cheese to melt.

Goes well with rice. May as well make it brown rice!!!

Teri-Yummy Chicken

6-8 chicken thighs - skin off
1/2 cup teriyaki sauce
1-1/2 TBSP honey
1/8-1/4 tsp ginger

Put raw/frozen chicken in slow cooker. Put teri sauce and honey in microwave to melt & combine. Add ginger (to taste) and combine well. Pour over chicken. Cook at high for 2-3 hours (maybe longer if using frozen chicken) and then turn to low (2-3 more hours in my slowcooker). When chicken is falling off the bone, remove it and allow to cool a bit.

In the meantime, cook rice or noodles and turn slowcooker back to high with just the liquid inside. Add equal parts flour and chicken broth to thicken the teri juice to gravy ( I usually use 1/4-1/3 cup of each). Allow liquid to come to a boil and thicken. Pick the meat from the bones, and dice chicken to bite-size pieces and add to gravy - just long enough to reheat.

Serve over rice or noodles (or even a bed of steamed veggies) and watch your family enjoy.

1 Large Pork Butt Roast - Bone in
Small bottle liquid smoke
2 or 3 banana's
Garlic Salt - or Garlic powder if you prefer

Remove plastic wrap from the roast/Rinse roast
Place in large crock-pot (oval Crock-pot works the best)
Puncture the roast with a fork - this will allow the liquid smoke to seep thru.
Pour half the liquid smoke over the roast
1 tsp Garlic salt
add water to the crock-pot, do not let it pour over the roast, add to the sides about 1/4 - 1/2 way up the roast.

Lay the banana's flat across the top of the roast (using as many as needed, I have never used more then 3) It depends on the size of your roast and the size of banana's.

Cover- cook for 8-10 hrs - I normmaly cook mine over night and then a few hours the next morning. It is very hard to over-cook. I would check maybe once to make sure there is still enough water.

The banana's will turn Black - try not to touch the banana's , they get very mushy.

Once ready, remove the banana's and throw them away.
Its Ok if some of the inside fall in the roast.
Remove the roast and place in large pan. I use a roasting pan. Be careful its hot. Wait until it is cool enough to touch then pull apart with your hands. Removing the bone. Continue to pull the pork to whatever desired pieces you like. Do not CUT - just pull.

It will be so tender and juicy it practically falls apart.

Add desired amount of BBQ sauce and mix or just top with BBQ sauce. Good both ways.

Seving Size - Depending on the size of the roast
Freezes great into individual servings. I add a little of the leftover juice to my left over for moisture when I re-heat.

Crock Pot Hamburger Cabbage Casserole

6 cups shredded cabbage (or bagged cole slaw mix)
1 pound 96% lean ground beef, browned and drained
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup onion, chopped
1 cup long grain rice
1 - 25 ounce Ragu Light spaghetti sauce
1 1/2 cups water
1/4 teaspoon basil
1/4 teaspoon seasoned salt
Creole seasoning to taste

Place half of the cabbage in a crock pot. Put ground beef over top. Sprinkle with half the salt and pepper and Creole seasoning. Evenly distribute onion, then rice over all. Top with remaining cabbage, salt and pepper. Combine spaghetti sauce, water, basil, and seasoned salt, pour over cabbage.
Cover and cook on HIGH for 3 1/2 to 5 hours or until rice is tender. Stir occasionally, and add water during cooking time, it it is too thick.
Serves 6
Serving Size: 1 1/4 heaping cups = 4 points

Kim's Notes: I use Ragu Light no sugar added Tomato Basil spaghetti sauce. You can use brown rice.

Slow Cooker Monterey Pasta
4 oz dry Whole Wheat Spaghetti, broken into pieces
1 egg
1 cup Light Sour Cream
.25 c grated Parmesan (don't use that green can grossness -- splurge on the legitimate shreds)
.5t minced garlic
2 cups 2% milk cheese (I used a blend of part-skim mozzarella and colby)
1 pkg. frozen spinach
.5 (6 oz can) French Fried Onions (1.5 cups)


Boil water for pasta. Thaw spinach in microwave, drain. Cook pasta until al dente and drain.
In a large bowl (at least 3 cups) mix sour cream, parmesan cheese, and garlic. Beat egg in a separate bowl and blend with the sour cream mixture.
Spray your slow-cooker with PAM and add the sour cream mixture. Add cooked pasta, cheese, spinach, and half of the french fried onions. Stir until mixed.
Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours. Top with rest of onions and more cheese if desired. I make this with homemade chicken strips for the non-vegetarians -- it goes wonderfully!
Makes 6 servings.
