A while back I was looking for a way to fix asparagus and brussel sprouts...I'm reporting back...It's been a while but I tried the Healthy Choice Pumpkin Squash Ravioli dish which has asparagus in it and found that with pumpkin and squash I have found a way to include the vegetable. I won't buy the frozen dinner to much because of the high sodium content but it did inspire me...

Used mashed sweet potatoes with brussel sprouts last night and emoticon ...

I found a vegan potato leek soup recipe that said that if you are watching your starches to substitute celeriac (celery root) for the potatoes. Has anyone tried celeriac? I am so interested in trying this recipe that I am going shopping tomorrow. Not my normal day.

I've never had rutabagas mashed or roasted, so let me know how that turns out if you try it...now I have mashed turnips before with ribs or steak (don't ask me why but it's usually something beef) as well as lightly boiled/steamed and they are good.

I roasted root veggies last night. Two new ones for me were parsnips and yukon potatoes. I overcooked the butternut squash in it. It turned out okay.

I used to use the zucchini bread recipe to make cookies.

My family used one of Emeril's recipes for brussel sprouts. Fresh brussel sprouts, onion, bacon, sauted together and then steamed in the pan until the sprouts are done. They were so yummy. So much better than the overcooked mushy ones.

Asparagus yum really good in the skillet with just a few tablespoons of water, some lemon juice, and once out of the pan a touch of lemon zest with pepper of course you want them chilled in a bowl of water prior to steaming in the skillet.

Not what I was expecting from prickly pears...maybe it's because I had the juice...prickly pear is a cactus fruit...too many seeds for me but the flavor's interesting so it will definitely stay on the fruits list but I'll juice it and add it to a fruit smoothie or add to a sauce.

I had some green beans Saturday evening like that. They were plain, lightly cooked, no seasoning butter/margararine, nothing. They were delicious. I am finding that overcooked veggies just don't work for me anymore. I love them just after a little heat and wham, ready to eat. Much better than cooking them for a long time.

I made some asparagus yesterday. Steamed them in a little bit of water until tender. Put them on a plate and my DD started stealing them one by one off the plate. We ate them plain. No seasoning, no butter, no sauce, nothing. It was the best I have ever tasted. That is major progress for me. No butter on a veggie.

For artichokes - trim off stem, trim the points off the leaves, let sit in lemon water for about 30 min, then place in covered container in the microwave for 4 min per artichoke (time depends on microwave). Let stand 2-5 min.

Pull a leaf to check. Should pull off easily. If not, microwave for a couple more min. Serve with melted butter, lemon mayo (or veganaise), eat plain. You scrape the meaty part of the leaf off with your teeth.

I haven't gotten too creative with asparagus. I will stir fry it in olive oil with onions, shredded carrots, and sliced yellow squash or I place them on foil or parchment paper and broil, basting with a little olive oil or using a non-stick spray. Maybe other people have some asparagus ideas.

WILLBOYWONDER, you're the third person who suggested onions with beets emoticon ...now that I have a way to cook them, they're on the grocery list and I'm ready emoticon ...anything in your cookbook for asparagus emoticon ...

And yes, mixing vegetables are fun...you not only get to change the flavor and texture but I think it adds some mental stimulation playing with the colors...

For beets, I love making them. The hardest part is cleaning them. They can be quite dirty at times. I just plop them down in a sink with soap and water, washing and rinsing them thoroughly.

Once they are clean, clip the tops off and boil the beets. Some people also cook and eat the tops too. They are supposed to be filled wiht a ton of nutrients, but I just discard them.

Once the beets are tender (when the blade of a fork can easily penetrate it, they are ready), place them under cold water then peel them. I find they peel better after they are cooked.

In a bowl, slice them or dice them or cut them however you like. Place vinegar over them, enough to completely cover the beets. I use apple-cider vinegar or rice vinegar but regular vinegar will do. I also slice up an onion in there with it. Gives it a nice flavor. Salt and pepper to taste. Tastes best if you let sit for several hours before serving. The good thing about this is they keep very well for long periods in the fridge. The vinegar serves as a preservative. I usually top it off with a packet of Splenda.

Oh yes, I love greens too. In fact, I enjoy mixing them. I often mix collards and kale together and mustards and turnip greens together. Mixing is a nice blended flavor.

Does anyone have a recipe suggestion for preparing artichokes, and beets...WILLBOYWONDER I haven't tried the brussel sprouts yet...I'm putting them on my grocery list NOW--can't wait to try!

I love artichokes steamed. They can be served hot or cold with different sauces. YUM I do think they are an acquired taste though. I love greens like collard greens, mustard greens, and turnip greens. I am strange that way.

For me, trying new things was an idea I had because I got into a rut. I was eating the same basic things and funny but I didn't even realize how mundane my eating was. Then I had some new things and boy, my meals were so much better. I still want to try artichoke. I got a jar of artichoke dip but didn't care for it. I want to find some other ways to eat it.

I tried pat a pan squash recently. I didn't like it but I think that had more to do with how it was prepared so I am going to suck it up and try it again.

I have always tried the new stuff I see in my local markets so there is not a lot of veggies or fruit I haven't at least tasted before, but what I will do with this suggestion is try to incorporate more of these foods on a regular basis, get out of the corn, peas, broccoli and carrot rut.

That is interesting as I was raised to eat all fruits and veggies at least once. After that if I did not like it did not have to eat it again.

I really can't think of a veggie or fruit that I have not tried, unless possibly from a 3rd world country. I know there has to be something over there that I have not tried.

Although I cook French, Italian, India, Chinese, German, Japanese, and probably a few more that I can't think of right now.

Good job on a new goal though Willie. I pat you on the back for great effort!

I went out last night and got my papaya. It was pretty good. I cut it up with some pineapple and watermelon, bananas, and red grapes and made a fruit salad with a little splenda on top. It was a nice refreshing treat. I think I might get it from time to time. It's a little pricey to have it all the time.

I tried lychees a couple years ago and they taste sweet but like nothing. It is weird.

Last winter we bought dragon fruit. It is expensive. Only one store around here has it. My son loved it as juice. It is really good.

The squash that you were talking about is suppose to taste like cucumber raw but is cooked in a lot of Hispanic cooking. Let us know how you like it Will.

Brussel sprouts are good if you cook them with garlic, chopped onions, salt, parsley, 2 table spoons of broth, and olive oil. Mix it all together and let sit for about 20-30 minutes before cooking.

I have tried some new ones. Brussel sprouts, ick, had to cover them in ceddar cheese. Also tried fresh avacado and star fruit which I loved!

One of my goals is to try and incorporate new fruits and vegetables into my diet. A veggie I see in my market all the time is a chayote squash. I never tried it but will do so soon. A fruit I never have had is papaya. I saw some in my market last night and think I will get one this week and try it.

Have any of you tried any new fruits or vegetables, and if so, what was the experience like?
