Kathleen's Turbo Veggie Soup
Servings 8 bowls or 16 cups

In a large pot Sauté 1st three ingredients:
1 Tablespoon EVOO
2 Clove garlic minced
1/4 Cup onion diced

Pour in -
2 Cups V-8 Vegetable juice (16 oz)
6 Cups Chicken Broth
2 Cups water
2 Cans Ro -Tel original diced tomato & chilis ( OR 2 cans diced tomatoes)
2 Tablespoons Apple Cider Vinegar

Add to the pot-
1 Cup Celery diced
1 Cup White Mushrooms rough chop
1 Cup Cabbage chop
1 Cup Fresh Spinach chop
1 Cup Zucchini diced
1 Cup Fresh Green Beans cut 1" pieces
8 oz COOKED Chicken breast chopped
1 teaspoon dry Basil
1/2 teaspoon dry Oregano
Salt & Pepper to taste
OPTIONAL - Red Pepper Flakes to taste

Cook/simmer for 30 minutes until veggies are soft.
These are personal choices of veggies in this recipe - slight variation from original.

Should make 8 bowls or 16 cups
Macros for one bowl serving-
Calories 90, Total Carbs 8g, Fats 3g, Protein 9g, Fiber 2g
( NET CARBS 6g per bowl )

ONE cup serving is 4g total carbs
