Yestrday I fixed my ham, then put it in 6 different freezer and storage bags (Large bags in the fridge, smaller freezer bags in the freezer). Then gave quite a bit of it to my neighbors.

Tonight I am not making anything. I had lunch at my friends of smoked turkey sandwiches, shrimp, a few sides and some dessert. No way I could handle anything else.

Oatmeal on the stovetop for breakfast. 100% whole oats with blackberries, some apricot preserves and half an ounce of walnuts. And coffee and milk on the side.

I am making some tortilla soup from my friend's recipe. It's actually turning into a tortilla stew because the chicken breasts were really huge. It calls for 2 breasts and I only had 1 1//2, but more than what that soup eeded

Last night was Cooking light Seared Scallops with Cauliflower Purée, and green beans. Yum! This morning breakfast stuffed peppers with black beans, potato, quinoa and spinach.

Had southern hash browns and ham for breakfast. Last night had a good sized salad, but that didn't sit too well with the IBS. Need to find some other way to get my greens.

I'm sensing a chili them! I made turkey chili last weekend, with green chiles and pinto beans--lean and tasty.

For the Superbowl, I'll probably make Cincinnati-style Chili 5-way, with extra lean ground beef spiced with cumin, cinnamon, and a dash of unsweetened dark cocoa. 5-Way style is layered over whole grain spaghetti and topped with kidney beans, diced white onion and finely shredded cheddar cheese. Just a little cheese for me, tho!

It's cold here today and chili sounds good. I can't have beans, but usually make green chili with pork. I have made red chili with just the beef.

Today I just heated some cream of chicken soup for lunch. I got salad mixes yesterday, so will probably have salad and something hot for supper (maybe the rest of the soup).

I have a new air fryer. I thought I would try out a recipe of sesame spinach. I have an abundance of spinach to use, and it is something I should put in my diet. I would rather not it go bad.

So far, I have been trying to work up the courage to try it.

Ratatouille! Eggplant, onion, garlic, carrot, zucchini, summer squash, green bell peppers, tomatoes and tomato sauce, simmered in a big skillet. I'm leaving out mushrooms because my bf doesn't like them.

Gumbo sounds good! My small kitchen heats up quickly, so yesterday I dug out my slow cooker and made a Spark recipe--Slow Cooker Orange Chicken. Chicken breasts simmered in orange marmalade with a little BBQ sauce, low-sodium soy sauce and fresh chopped ginger. Very tasty!

Made chicken & sausage gumbo for supper last night. It turned out pretty good--got the recipe off a bag of "frozen gumbo veggies" from Kroger. Found the recipe calculator on SP so I can figure out how many calories it actually is (I estimated from other entries on the food tracker).

Two more blood sugar crashes. I think I am just doing way more physical work than I am used to. I would much rather use my mind than my body. I am getting too old for this heavy duty stuff. Made meatloaf and mashed potatoes with Japanese long beans.

My blood sugar bottomed out on my twice already today. Working a bit too hard. But I made sesame chicken and rice for lunch with grape tomato salad. Still too low two hours later so I added a banana to that and will take it a little easier this afternoon till things come back up to normal.

Wolfpack burgers - kind of like sloppy joes only with a mushroom/cheese sauce instead of the tomato sauce. Really good stuff! Also a cucumber salad and a Halo - not for my head, the eating kind.
